Correct Values from Forms in Mails

Hi together,

I have a (beginner) question.
I d like to display in the mail the choices the user did filling the form.
For instance: Number of pages: 1-3; SEO: yes.

Until now, there are no correct values in the mail. Only 1, 0, …(Screenshot)

Any idea? Or do you know a good manual / tutorial?
