Creating/editing emails in version 2.0

We have just started working with version 2.0. In creating/editing emails, I do not see how to do basic editing tasks such as single spacing vs. double spacing. I also cannot see how to insert fields from the contact record such as First Name. I can do only very minimal editing. I could use suggestions on what I need to do. The documentation is no help other than telling me that I can do all of the things I want to do but not telling you how. I guess I am too use to using Word.
