Did you mean, that you can’t customize the text in the grapesjs editor?

The screenshot is from the old e-mail builder.
To see it you have to deactivate the “GrapeJS Builder” plugin and create a new e-mail.
Nevertheless I advise you not to use it because it is not maintained anymore.
