error with accentuation

Hello!
When i send a email message with accentuation in subject this error below appear on destination, anyone have a solution for this?

the tables has a utf8_unicode_ci collation
the database has a latin1_swedish_ci collation

Hi! thanks for reply.
I change the collation using your indication, the subject appear ok on gmail inbox, but some places the accentuation appears strange, see: https://i.imgur.com/uTClpkA.png
