I started viewing the Udemy course and it does not correlate well with version 1.2.3 of Mautic.
IE: Forms / actions is missing from my installation. Very frustrating to see that lots of items are different from what is currently out there.
Any thoughts ?

You should take that up with the instructor 
It’s fairly close still I believe but based on the speed of development of Mautic may be slightly off. However I think that the last time I saw it they were good enough to understand the concepts.
Again though, probably should address it directly with them instead of complaining here in the community forum 
Not complaining. Mistake was on my part. Selected wrong form.
BTW: Instructor on Udemy shows as you. (your name) if not, might want to look into that
