I think those settings allow you to track IN facebook and IN analytics, not in segments.

I mean , on mautic where we can see tracking data related to those settings in contacts or in other objects?
When you turn on facebook and google analytics, you send id level data TO those services, not the other way around. You will not suddenly collect facebook data. 
This data is not available for you probably, because FB and GA won’t share it with you, but it makes targeting better once you PAY for their services.
