Or do they have to fill out a form on my website/Landing page?
Sending through Mautic, every user gets its own “version” of the link. Whenever one of those prepared links are called, Mautic knows which user opened the link. It then can set the cookie and record the IP Adresse linked to your lead.
So if the email is in my database and I send them a link to my website and they open it, Mautic now knows the IP?
There needs to be some action that links the email recipient with a website lead. You mentioned some options, but even clicking a trackable link should help. Not sure if simple tracking the opening of an email should work as well. However, this would probably not allow to set a cookie, if the recipient just reads the mail without opening any link.
